Who doesn't love Bacon || The Great Bacon Whiskey Experiment

Bacon. Fantastic. Whiskey. Delightful. Together? Unstoppable.

I'm certainly one of those people who hear "fantastical crazy" and then think to myself, this must be done.  Way back in 2009, long before it became the popular cultural phenomena that it is today, I'd started to hear whispers and rumblings about a new sort of infusion, a "fat washing" process generally used by perfumers to extract essences, but one that was making its way into the alcoholic mainstream.  It's a simple process, one that involves mixing a melted fat with alcohol, letting it infuse and then freezing the mixture until the fat solidifies and can easily be strained out of the product, leaving behind a beautifully scented and tasty spirit.  All it takes is a little bit of patience and some elbow grease.

Bacon Infused Whiskey
  • 3-4 strips of Bacon (I used a nice Applewood Smoked Bacon)
  • 8 oz Whiskey (always a fan of Bulleit Rye Whiskey) 
  • Small Bell Jar 
  • Frying Pan
  • Cheesecloth (or strainer)
Cook the Bacon over medium heat in the frying pan until it just starts to crisp. Place one strip of bacon into your container (mostly for decorative purposes... I mean c'mon, looks way cooler) and eat the rest. Pour the reserved bacon fat into the jar followed by the Whiskey.  Seal & let sit for at least 12 hours (up to 24 hours) in a cool & dry area. Shake a bit & then freeze overnight to solidify the bacon fat. Wake up & strain the now infused whiskey using a cheesecloth or small strainer.  Enjoy chilled over ice.

Ippudo NY || 5/22/12

Nestled in an unassuming block on 4th Avenue, Ippūdō NY is a fixture amongst ramen aficionados, manhattan foodies & college students looking to class up their budget meals.  Founded in Fukuoka (hey, that's where my family is from!) by Shigemi Kawahara, the CEO of Chikaranomoto Co, Ippudo was Kawahara's answer to the Kyushu's dying ramen industry.  He named his chain Ippudo, or "one wind hall" because his intention was to use the restaurant to "blow wind and revolutionize the era."

With a chain of restaurants all over Japan, Kawahara set his sights on another little island, Manhattan.  Ippudo NY is their first overseas location, opened in 2008.  Since then, fans have flocked from all over the country for a bowl of steaming ramen, fatty pork belly, succulent eggs and a taste of their mouthwatering noodles.

For every Ippudo fan you meet, there's always a dozen of their friends who claim this & that other restaurant has better ramen, better noodles, better broth, better pork belly... but there's one thing that's undeniable, Ippudo has created a brand that constantly attracts massive crowds & diehard eaters, making this US outpost a serious destination.  And since they don't take reservations, you can either expect to eat early (like right when the doors open) or wait up to 2 hours for a coveted spot inside their moderately sized dining room.

Having a free afternoon, my friend & I decided to brave the storm and try our luck at this delicious eatery.  Thankfully we only had to deal with a 20 minute wait, pretty nice for a weekday lunch time.  Wanting a variety of flavors we opted for an Akamaru Modern, a dish that really represents their revolutionary flavors, and the special Kasane Black, mostly because I have a hard time resisting anything doused in black garlic oil.  The Modern is dubbed thus because of the addition of Ippudo's secret "Umami Dama" miso paste which adds an incredible layer of depth to the already delicious broth.  The noodles as I've said before are to die for... and the addition of the Nitamago is the perfect vehicle to mop up all of the delicious flavors in one bite.  Honestly a perfectly pleasing bowl of happy.

Kuro Kasane Black ($16)
On the other hand, I screwed up my Kasane Black order.  Not wanting to be overly gluttonous I very erroneously omitted adding on an extra order of Kakuni braised pork belly.  Major fail.  Part of what makes the fatty black garlic oil so powerful, is well, fat.  This bowl needed a little extra.  Chashu is good and all, but there's nothing quite like a huge block of succulent belly to make a meal perfect, right? And next time I'm certainly adding on a dollop of their Bakudan Ippudo original spicy paste for an extra kick.  Yes. I will be back.  That's something I'm certain of.

Afternoon Snack Plate || Humbolt Fog & Parmesan

If there's one good thing about being "fun" employed, it's the chance to do some serious afternoon snackage... Working Niki barely breaks for lunch, if that, so life on a pause Niki is going to sit back, relax, and completely enjoy the free time to eat delicious foods while catching up on her ridiculous stack of READ ME books!

Today, I decided to do a little Cheese Plate to go with an afternoon of George R. R. Martin's A Feast For Crows.

Ingredients
  • Parmigiano-Reggiano - A little show called Master Chef might have turned me into a Whole Foods (www.wholefoodsmarket.com) cheese snob.  Sorry, I'm sure you could get your Parm elsewhere, but this is where I now go.
  • Humbolt Fog - Ditto. 
  • Guava Paste - Ditto.  They sell this in pre-cut slices over in the cheese section.
  • Micro Basil - Another Whole Foods purchase, look for Micro Greens over in the produce area. Regular basil would certainly suffice if you can't find any micros!
  • Balsamic Vinegar - I've recently become obsessed with this CaliVinegar Barrel Aged Balsamic (www.calivirgin.com) I found at Monsieur Marcel's in the Fairfax Farmer's Market. It's that thick, gooey, aged balsamic that you can eat with a spoon.  And it's not too pricey! Score!
  • Lemon Curd - Trader Joe's (www.traderjoes.com) has an awesome curd over in their jam section. If I'm not eating it with cheese, spread on a slice of brioche is another fantastic use.
  • White Balsamic Vinegar - Not sure where this came from to be honest, but tons of grocery stores carry it!
  • Pesto - I know, I know. It's so easy to make your own Pesto, but why do it when this awesome local company Basil Tops (www.basiltops.com) makes it better??  I always stock up every time I see them at the Hollywood Farmer's Market.
  • Olive Oil - Shh... This might have been a MC Pantry steal.  Laudemio Frescobaldi Extra Virgin Olive Oil (www.laudemio.it) Obviously any really nice Olive Oil will do!
  • Sea Salt - I'm obsessed with Monsieur Marcel's Vintage Merlot Sea Salt (www.mrmarcel.com) for both it's complex flavor and it's gorgeous color!  It really adds a nice crunchy balance, especially on the Guava Paste.
 Start with a blank canvas.

 Pour on the first layer. I'm a balsamic fiend, so I start mine in a pool!

 Chop up the Parmesan. Use the tip of a knife to break it into pieces.

 Cut up the Humbolt Fog as well. This has to be done more carefully since the Fog is a much softer cheese. 

 Next, cut up the Guava Puree into bite sized pieces.

First, arrange the Parmesan & Humbolt Fog pieces around the plate. Lay down the Guava Paste in between. Dollop a dot of Pesto ontop of each piece of Parmesan.

 Swirl in a few dollops of Lemon Curd to add a tangy offset to the Balsamic. Add a few sprigs of Micro Basil & sprinkle with Sea Salt.

Finally, add a few drops of White Balsamic Vinegar, a drizzle of Olive Oil & Enjoy!

Mission Chinese Food || 5.19.12

So I've got a friend.  A great friend.  He's one of those friends that everyone should have.  A foodie forward, game for anything & actually on top of his shit friend.  One that instinctively knows which events will be awesome, which restaurants are worth checking out, and which bars have the best cocktails.  So when I told said friend I was coming to New York on an impromptu trip, he lined up a pretty spectacular meal, one I'll remember for quite some time, and one that makes me want to book another round trip flight to the big apple ASAP.  So thank you Jared & thank you VICE and your Munchies series for making this all happen!

Mission Chinese Food, a much applauded San Fran classic was making it's move to New York and my friend had snagged 2 seats for their preview dinner.  Mission Chinese is by all accounts a dive pop-up that cooks out of another kitchen, Lung Shan in off hours.  The chef, Danny Bowien is a Korean, adopted at birth by non-Koreans in Oklahoma City who never cooked Chinese food until he opened the doors to his restaurant. That seems like a recipe for disaster, non?

Nope, it wasn't.  Bowien, like many of his contemporaries, understands the changing nature of the food landscape and completely embraced the unique melting pot of cultures that helped form him into the chef he is today.  Classified as "Recognizably Chinese" Bowien's menu draws on traditional fare, but pushes it a step further by infusing his own take on the subject.  This was wild-y evident in what was easily my favorite dish of the night... Kung Pao Pastrami!

Celebrated by the likes of James Beard, Food & Wine, Zagat, Bon Appetit & GQ, this is clearly not someone to be missed.  Now, onto the eats!!

CHILI PICKED TURNIPS AND LONG BEANS (4)
White Soy, Cumin, Chili Vinegar
SMASHED CUCUMBERS IN GARLIC SAUCE (4)
Salted Chili, Sesame Paste, Fresh Coriander
 We started off the meal with a few small nibbles, the long beans were a touch on the vinegary side for a first bite, but as the food progressed I certainly appreciated a bite or two to cool off my mouth.  The smashed cucumbers on the other hand were phenomenal!  I think I could have easily eaten a plate full of em and called it a day! Well worth the snackage.

 MAPO TOFU (12.5)
Pork Shoulder, Doubanjiang, Sichuan Pepper
 Jared's "must have" when ordering, this was silky and delicious but MAN was it spicy. Being the little lightweight that I am, I could only manage through a few bites before I had to stop.

 SALT COD FRIED RICE (11)
Slow Cooked Mackerel, Chinese Sausage, Lettuce, Egg
 When ordering the Mapo Tofu, you MUST order this delicious rice dish as well. Unless your stomach is lined with wildfire you'll appreciate the salty sweet of this dish to offset. The fish flavor was very light and paired perfectly with the slightly sweet & smoky Chinese sausage.

KUNG PAO PASTRAMI (11)
Peanuts, Celery, Potato, Explosive Chili 
 Like I said earlier, FAVORITE DISH. And surprisingly not nearly as spicy as the Tofu, even with the words "explosive chili" in the title.  Then again, I mostly ate the Pastrami & Peanuts, skipping the bright red peppers when possible.  Truly an amazing plate of food and one I'd come back for time & time again.

 LAMB CHEEK DUMPLINGS IN RED OIL (8)
Black Vinegar, Rock Sugar, Peanuts, Numbing Peppercorn
 Very solid dumpling dish, the lamb cheeks were tender and flavorful, the broth a perfect vinegary spice and the dumpling wrappers very light. But with everything else the menu had to offer, this was just a good dish, not great.

 THRICE COOKED BACON (11.5)
Shanghainese Rice Cakes, Tofu Skin, Bitter Melon, Chili Oil
 Another one of those "must gets" when coming. For anyone who's never tried a rice cake before, this is the perfect dish to pop your rice cake cherry.  The chewy cakes mixed with the smoky & meaty bacon and the spicy chili oil was a perfect combination.  We did find ourselves dipping the rice cakes into the leftover Smashed Cucumber sauce which was also amazing.

 "MOUTH WATERING" CHICKEN (9)
Chicken Terrine, Dry Spiced Chicken Hearts, Vegetable Noodles
 The next morning my friend IM's me... "when did we get chicken hearts?!" The answer was here. A cold and refreshing dish, this was very delicate & complex in flavor.  It was a nice unexpected treat!

TEA SMOKED EEL (9)
Pulled Pork Trotter, Chinese Celery, Cheung Fun, Crispy Fish Skin 
 By this point in the evening we were already stuffed to the brim but there were two more dishes that we HAD to try.  The Tea Smoked Eel was a nice and light ending to the dinner (granted we probably should have ordered it as an appetizer.) Good but nothing super special here.

SAVORY EGG CUSTARD (13)
Sea Urchin, Trout Roe, Apple, Citron 
 And finally, we ended on the Savory Egg Custard which was just... WOW. Wow wow wow is all I can say. If you go, definitely treat yourself to one of these.

Weekend Docket: 5/18/12

There's a ton of fun things going on in LA this weekend!  Too bad I'm in New York & won't be able to attend any of them (Yeah I know you guys just feel SO SORRY for me...)

So just to make you a little jealous, my weekend's consisting of a 16 course preview at the brand spanking new Mission Chinese Food, cocktails at the opening night of Demi Monde, some event that I'm still having a hard time saying without giggling but still sounds awesome... 32nd Annual Picnic des Chefs

The Club Culinaire of French Cuisine will hold its annual Picnic des Chefs on Sunday at Vasa Park in Agoura Hills, where 4 acres of lush mountain side await you. LA’s top chefs will create authentic dishes from various regions of France. Participating chefs (partial list): Marius Blin (Hotel Sofitel); Michel Blanchet (Michel Cordon Bleu); Joe Miller (Joe’s Restaurant); Josie LeBalch (Josie Restaurant); Neal Fraser (BLVD); Yvan Valentin (Sweet Temptation); and Christian Kaufmann (Emil’s Swiss Pastry). Chefs will cook up over 700 lb of meat, poultry and fish, 500 lb of vegetables, 200 lb of cheese and 500 baguettes, 50 artisan breads and much more.
