Ease into Fall with 5 Deliciously Comforting Beet Recipes

As the weather starts to cool down, and the leaves begin their descent into warm fall hues, the grocery store bins begin to fill up with gorgeous root vegetables just begging to be taken home. Fresh beets that range from golden yellow to royal purple have long been a staple in fine-dining, but they’re great for home cooks as well. Beets add a splash of vibrant color, a delicious flavor and a silky texture to any meal. Plus they are extremely nutritious and high in antioxidants.
When buying fresh beets, be sure to look for small to medium globes that still have their stems and leaves attached. You want to make sure that they are firm, with a smooth skin and free from any soft bruises. If you’re storing them, be sure to trim the stems to about one inch and keep them refrigerated in plastic bags for up to two weeks. And if you’re worried about stains try picking up a pair of disposable latex gloves from the drugstore.
