Cupcake of the Week: Royal as Fuck Cupcakes || Week 15

When some of my friends announced they were throwing a Fancy Dress party fit for Royalty the evening after the big nuptials, I knew I wanted to bring along something equally as decadent as my tiara I'd dug up from my high school prom.  So after a quick visit to Surfas & a purchase of Champagne flavored extract I was ready to bake up some cupcakes that were Royal as Fuck.

** in case you were wondering, the boyfriend used that term when wondering what kind of hat i'd found for him to wear... "it better be royal as fuck!" I found it to be extremely appropriate given the context of the party. **

Royal as Fuck Cupcakes || a.k.a. Chocolate Dipped Strawberries & Champagne
yield 2 dozen mini cupcakes || 20 minutes prep; 25 minutes cook
  • 1 cup white sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 2 teaspoons champagne extract
  • 8-10 small strawberries diced
pre-heat oven to 350 degrees. in a bowl mix together all of the ingredients. line your mini cupcake tray and fill each cupcake 2/3 of the way full. bake for 25 minutes or until golden brown. this recipe will yield 2 dozen minis.

champagne frosting
  • 1/2 cup (one stick) of butter
  • 1 box of powdered sugar
  • 2-3 tbsp champagne
in a bowl whip the softened butter until it's nice and smooth.  slowly incorporate the powdered sugar & champagne, alternating until you've reached your desired consistency. set aside & finish the garnish.

chocolate covered strawberries
  • box of mini strawberries, cleaned & dried
  • 1 lbs of chocolate
  • gold sprinkles
in a bowl over a double boiler (or in a microwave if you don't have a boiler) melt your chocolate.  dip each strawberry into the chocolate & then set onto a plate covered in wax paper.  toss on a pinch of gold sprinkles for an added kick of decadence and then place your plate into the refrigerator so the chocolate can harden.

spread frosting over each mini strawberry cupcake & then top with a chocolate covered strawberry.  serve with a flute of ice cold champagne.
