Joy The Baker... you bring such deliciousness into my life. When I saw your No-Bake Peanut Butter Tart I knew I had to give it a try for myself. And the results? Perfection.
Although I now totally realize that I skipped a step of adding the extra whipped cream to the top as an added layer. And I substituted the mixed nuts with banana chips.
Which added a very interesting dynamic to the whole taste & texture. What I'm thinking next time I make this... is to add a layer of fresh bananas under the whipped peanut butter mixture, and then drizzling the top with a sweet chocolate honey! Kind of like the ultimate kid's pb sandwich in a pie :-).
Crust
graham crackers (I just used 2 blocks out of the box)
6 tablespoons melted butter
Pie
1 cup heavy cream
1 cup peanut butter
3/4 cup cream cheese
1/3 cup + 2 tablespoons sweetened condensed milk
banana chips
Prepare the crust first. Mush up the graham crackers & mix in the butter. It should form a nice mealy mixture which you can then spread in your pie tins. This easily made 2 pies :-). Throw it in the fridge to set while you whip up the rest.
Mix your peanut butter, cream cheese & condensed milk in one bowl. In a separate bowl, whip your cream into stiff peaks. Reserve 1/4 of the whipped cream for a topping. Slowly fold the peanut butter mixture into the whipped cream & then pour it into your pie crusts. Let it set up in the fridge for a while and then top with the remaining whipped cream & a few banana chips as a garnish before serving.
Be sure to serve it right out of the fridge!
