Breakfast in Bed: Poached Egg & Goat Cheese Stuffed Tomatoes

Poached Egg & Goat Cheese Stuffed Tomatoes with a fresh Bloody Mary, Strawberries & Pink Lemonade

The results of a very silly bet, put me in the situation of having to cook my boyfriend a delicious breakfast in bed.  After reading about Market Fresh Breakfast's thanks to NPR, I knew I had an ace up my sleeve.  However I made a few slight changes...

Start with some ripe heirloom tomatoes...  cut a hole in the top (keep the top for a garnish later) and I used a melon baller to scoop out the middle.  I saved the innards for my Bloody Mary's later.

Then turn them upside-down on a napkin to drain. 

While you're doing that, I sauteed some garlic & minced onions in olive oil to throw in the tomato.  Turn your oven up to 450 degree, place your tomato shells on a pan, salt & pepper the inside, then throw in the garlic & onion mix, a generous serving of goat cheese and lastly crack a fresh egg into the center.  Drizzle on a little bit of olive oil & bake until the egg looks nicely poached. 

I toasted up a few pieces of baguette which soaked up the runny egg tomato mixture perfectly. 

As for the Bloody Mary... I've never actually made one before, so this was a total experiment!  Per IZ it was spicccccccy and tasty.  Although I can never tell if he's just being nice.  At least to me, I couldn't taste the alcohol & thought the flavors mixed well. But I wish I'd blended the tomato pulp a little more.

Fresh Bloody Mary w/ a Bacon, Cayenne, Salt & Pepper Rim
1/2 cup fresh tomato juice
1 1/2 ounces vodka
2 teaspoons fresh lemon juice
Worcestershire sauce to taste
Tabasco to taste
1 celery stick for garnish

Combine the vodka, the tomato juice, the lemon juice, the Worcestershire sauce, the Tabasco, 1 cup ice cubes, and salt and pepper to taste, shake the mixture well, and strain it into a tall glass. 

For the rim...  Mix up some Bacon Salt, Cayenne Pepper, Sea Salt & Pepper.  Rim your glass with some Tomato juice & then dip it in the spice mix.  

Garnish the Bloody Mary with the celery stick & enjoy!
